Pancakes with Colli Borbonici® extra virgin olive oil without butter

Fluffy homemade pancakes with Colli Borbonici® EVO Oil: a breakfast that both adults and children will love.

Pancakes are one of the world's most beloved breakfasts: fluffy, golden, and versatile, they lend themselves to a thousand variations. In this version, we make them without butter, using Colli Borbonici® extra virgin olive oil, which makes them lighter but just as fluffy.
Perfect for starting the day with energy, but also as a tasty snack to share with the family.

🌿 Ingredients (for about 10 pancakes)

200 g of 00 flour

2 eggs

80 g of sugar

140 g of milk

3 tablespoons of Colli Borbonici® extra virgin olive oil

Half a sachet of baking powder (about 8 g)

1 pinch of salt

👩🍳 Preparation

Dough
In a bowl, beat the eggs and sugar with a fork. Add the oil and milk, stirring constantly.
Combine the sifted flour, baking powder, and a pinch of salt.
Mix until the mixture is thick and free of lumps.


Cooking
Heat a heavy-bottomed nonstick pan and lightly grease it with oil, removing the excess with paper towels.
Pour in a scant ladle of batter and cook over medium heat for about 2 minutes, until bubbles appear on the surface.
Flip the pancake with a spatula and cook for another 2 minutes on the other side.

Service
Stack the pancakes on a plate and serve them while still hot.
You can enjoy them with jam, chocolate cream, maple or agave syrup, fresh raspberries and a dusting of powdered sugar.
