  1. 250 g of 00 flour (or half wholemeal for a rustic version)

  3. 80 g of cold water
  4. 1 pinch of salt

For the filling

  1. 2 medium aubergines
  2. 3-4 ripe September tomatoes
  3. 200g mozzarella fiordilatte (or smoked scamorza)
  4. Fresh basil to taste
  5. Salt, pepper and Colli Borbonici® oil to taste

Step-by-step procedure

1. Prepare the base

  1. Mix flour and salt.
  2. Add the Colli Borbonici® oil until the mixture becomes sandy.
  3. Add the cold water and knead until the dough becomes smooth.
  4. Wrap in cling film and leave to rest in the fridge for 30 minutes.

2. Prepare the filling

  1. Slice and grill the aubergines, seasoning them with salt, pepper and extra virgin olive oil.
  2. Slice the tomatoes, salt them and let them drain.

3. Spread the base

  1. Roll out the pastry to 3-4 mm and line a 24 cm tin.
  2. Prick the bottom.
  3. (Optional) Blind bake for 10 minutes at 180°C with baking paper and dried legumes.

4. Assemble the cake

  1. Alternate layers of eggplant, drained mozzarella, basil, and tomatoes.
  2. Repeat until ingredients are used up.

5. Final cooking

  1. Drizzle with Colli Borbonici® oil.
  2. Bake at 180°C for 30-35 minutes, until golden brown.

6. Serve

  1. Leave to cool for 10 minutes.
  2. Excellent hot or at room temperature.
