The secret to its softness? Colli Borbonici® extra virgin olive oil , which gives it lightness and a unique flavor.
Ingredients (20 cm mould):
- 4 ripe figs
- 2 eggs
- 60 ml Colli Borbonici extra virgin olive oil
- 50 ml milk (also lactose-free)
- 200 g 00 flour
- 80 g dark chocolate, chopped
- 1 sachet of baking powder
- Vanilla to taste
- 1 pinch of salt
- 2 figs to decorate the surface
Procedure 👩🍳
Blend the base: Place the chopped figs, eggs, milk, and oil in a blender. Blend until smooth and fragrant.
Combine the dry ingredients: Transfer the cream to a bowl, add the flour, baking powder, vanilla, and a pinch of salt. Mix well with a spatula or hand whisk.
Add the chocolate: Add the dark chocolate pieces and mix gently.
Decorate: Pour the mixture into the pan lined with baking paper and decorate the surface with fresh figs cut into wedges.
Baking: Bake at 180° (fan assisted) for about 40 minutes, until the cake is puffed up and golden.
Tips 💡
👉 If you love rustic flavors, you can replace half the 00 flour with whole wheat flour.
👉 For an even more delicious touch, add a dusting of brown sugar to the figs on top before baking.
