Tall and soft bread with extra virgin olive oil

In a world where simplicity meets quality, our homemade bread with Colli Borbonici® extra virgin olive oil is born: tall, soft, light and with an unmistakable aroma.


Today we present you a recipe that enhances the essence of our EVO oil in a genuine bread, made with the Moulinex Pain d'Or bread maker, selecting Program 7 (Sweet Bread), also perfect for soft and well-leavened doughs.

🌿 Why use extra virgin olive oil?
Our extra virgin olive oil isn't just a condiment: it's a living ingredient, enriching bread with aroma, lightness, and authenticity.
It replaces butter or other refined fats, giving a soft, more digestible and naturally healthy result.

📝 Ingredients for a loaf of bread with 400 g of flour:
Flour: 400 g (type 0, 1, 2 or cereal – if using spelt, see note below)

Warm water: 258 g

Dried sourdough: 24.6 g

or 9.2 g of fresh brewer's yeast (dissolved in part of the water)

Extra virgin olive oil: 18.5 g

(Optional): 1 teaspoon of honey to better activate the yeast and give a light fragrance

👨🍳 Procedure with Moulinex Pain d'Or – Program 7
Place the ingredients in the machine basket in the following order:

Warm water

EVO oil

Honey (optional)

Flour

Yeast (last, without direct contact with liquids)

Select Program 7 – “Sweet Bread”, perfect for obtaining a soft texture and a delicate crust.

Start the machine: the kneading-rising-cooking cycle will last approximately 3 hours and 30 minutes.

Once cooked, let the bread cool in the basket for 10 minutes, then carefully remove it and let it cool on a rack.

🍞 The result?
A tall, well-aired, and incredibly soft bread with a thin, fragrant crust. Perfect for breakfast, a snack, or as a side dish with savory dishes.

📌 Notes and variations:
If using spelt flour, reduce the water to about 230-240 g (it absorbs less liquid).

For a more rustic scent, you can use a mixture of type 1 and wholemeal flour.

Want a richer bread? Add seeds (flax, pumpkin, sunflower) before baking.
