In the article of August 27, 2024, " Creation of a new olive tree plantation - Colli Borbonici® " , we described the start of an ambitious project: the creation of a new olive tree plantation, with particular attention to the procedures for optimal soil processing and the ideal preparation of the plants throughout their entire life cycle.
In the last few days, we have moved to a crucial phase of the project with the planting of 100 olive trees , of which 96 are of the Carpellese variety and 4 of the Maurino variety , the latter chosen as a pollinator.
This initiative aims at the production of high quality extra virgin olive oil, with particular attention to the Carpellese cultivar, an excellent variety linked to the Campania area.
A short video of the final stages of the installation of the olive trees.
The oil produced from this cultivar is renowned for its unique characteristics:
-
Distinctive aroma and flavour
- Aroma: Fresh and fruity aroma with herbaceous notes of artichoke, almond and light nuances of green apple.
- Taste: Balanced taste, with a pleasant intensity of bitterness and spiciness, ideal for enhancing high quality dishes.
-
High organoleptic quality
The Carpellese cultivar generates an oil with a high content of polyphenols, which guarantee:- Long shelf life.
- Antioxidant properties, beneficial for health.
-
Health Benefits
Thanks to the presence of polyphenols, monounsaturated fatty acids and vitamin E, this oil supports:- Cardiovascular health.
- The fight against free radicals, with anti-aging effects.
- Anti-inflammatory properties.
-
Versatility in the kitchen
Carpellese oil is perfect both raw (on bruschetta, salads, vegetables and seafood) and cooked, maintaining stability and aromatic profile. It is an ingredient of choice for Mediterranean cuisine. -
Connection with the territory
Carpellese represents a symbol of Italian olive biodiversity, often cultivated in a traditional and sustainable way, respecting the environment and the Cilento territory. -
Valorization in niche markets
Being less common than other varieties, Carpellese oil is considered a niche product, highly appreciated by connoisseurs and in gourmet markets.
This project is not only an agricultural investment, but also a contribution to the valorization of the local olive growing tradition and a step towards the production of an extra virgin olive oil that combines quality, health and sustainability.
