Essential Parameters for the Certification of Extra Virgin Olive Oil

To obtain certification as extra virgin olive oil, several chemical parameters must be evaluated, with the following being fundamental:

Acidity, which must be below 0.8%;

Polyphenols, with an average value around 250 mg/kg;

Peroxide Value, below 20.

Although there is no mandatory minimum value for polyphenols, it is widely recognized that the beneficial properties of extra virgin olive oil are closely related to their content. These compounds play a crucial role in protecting our bodies against toxins and free radicals.

2024 Chemical Analysis Results

Thanks to harvesting and milling within 24 hours and the cold extraction process, the results achieved were excellent:

Acidity: 0.25%;

Polyphenols: 422 mg/kg;

Peroxide Value: 8.

In addition to these, other fundamental chemical parameters (Delta K, K232, K268) confirm the low oxidation level of the product, further evidence of the high quality of the extra virgin olive oil produced by Colli Borbonici®.

Sensory Analysis

In addition to chemical analyses, we submitted our extra virgin olive oil to a sensory analysis conducted by the Italian Association of Olive Oil Sommeliers. This evaluation awarded our oil a final score of 82 out of 100, corresponding to the judgment of "very good oil". This result confirms not only its chemical excellence but also the organoleptic characteristics that make our product unique.
